banja VLAD'S PUMPKIN LOAF and other cherished recipes for any occassion!
This is kind of experimental to me, I have never made one and I used all my baking soda (in kitty litter a long time ago, it did not help) when I just needed two tsp. of it for this recipe. shithit

Ok, the recipe takes 2 tsp baking soda and two tsp of baking powder. I used instead, 3 tsp baking powder with two TBSP extra of flour. blink Let's see what happens?

Also, I used one whole cup of melted butter in place of one cup of oil. My gawd, I hope this turns out...

2 cups pumpkin puree(I just used all what was left in the pumpkin I baked.... ) My gawd, this is just getting messier and messier! Smile

2 cups white sugar

4 eggs

1 cup melted butter clarified.... stir this all up

2 cups flour (plus my extra 2 TBSP) also a high altitude recipe....
2 tsp of cinnamon
1/4 tsp ginger

2 cups raisins if you like. I used 10 ounces only that was all I had.

Bake 350 for 60 to 65 minutes til knife inserts in middle clean.. ofc at 350 poured into two loaf pans. Again, I have one loaf pan and one 8 inch cast iron skillet, which prolly will bake in less then an hour. ver I better go check it!

cold cucumber soup with yogurt

a whole cucumber for a big container, a whole bulb garlic minced, salt and pepper to taste, a couple splashes of vinegar and water to consistency

hi OK! I am going to ad my 'experiment' here: It is a pumpkin cake , but I am using a squash instead. blink I will put a picture up of it. I thought it was a spaghetti squash, but I have no idea what I was thinking that day.

I also am putting peanut butter in it instead 1/2 cup of butter, and I am using toasted spiced pumpkin seeds. Ok, here goes. I will be back with the recipe after I see if it bakes ok?

I think it is a Hubbard squash, but not sure since I thought it was a Spaghetti squash in the first place?

Smile I am going to freeze it, I think. I don't want to eat it right now. I tasted the batter. It was ok. I think it needs some butter cream cheese frosting. More sugar, but that is ok. I only eat sugar everyday! a little. not much. but sometimes i like to eat sugar so i zone out you know? o well. they came out ok.

Original recipe makes 1 - 12x18 inch pan Change Servings

2 cups white sugar

1 1/4 cups vegetable oil(I use butter)

1 teaspoon vanilla extract

2 cups canned pumpkin

4 eggs

2 cups all-purpose flour

3 teaspoons baking powder

2 teaspoons baking soda

1/4 teaspoon salt

2 teaspoons ground cinnamon


ok, here it is... but I post what I did. Most of it is in my first post about this. It is moist and yummy. and does need some butter cream cheese frosting... Rose
